Add the egg yolk, vanilla, and salt, and mix well. Add the flour and mix until a soft dough forms. It may look a little crumbly at first, but it will come together. Transfer the dough to a small bowl, cover, and refrigerate for 1 hour so the cookies hold their shape. Preheat the oven to 350°F. Lightly flour your surface and roll out the chilled dough. Use cookie cutters to shape the cookies, then place them on a parchment-lined baking sheet. Bake for 8–10 minutes, or until the edges are just lightly golden. Let cool completely before icing.
