@thecheesewheelgvl: It’s finally here for the holidays! Or at least the next 2 weeks, until sold out. We just brought in and cracked open a full, 90lb. wheel of *5-Year-Aged* Parmigiano Reggiano DOP! Now, while Mike would undoubtedly, exuberantly ramble for hours on-end about the illustrious history of Parmigiano Reggiano — whilst simultaneously and figuratively shredding (pun intended) that ultraprocessed “Parmesan” (notice the use of quotations over the word “Parmesan”) of which is commonly found in tennis ball tubes, at your local supermarket…. We obviously suggest stopping by the shop in-person, as we’d be more than happy to sample this 5 Year Parm for those interested - for comparative purposes! But for a brief description: For Parmigiano Reggiano DOP aged for *60 months* — the friability of the cheese is further increased (compared to younger Reggiano varieties) - presenting an amber, grainy, and mineralized paste. The taste is strong and very intense, but never spicy (as can occur with other very mature cheeses). The typical aromas of younger maturations (milk, yogurt, and hay) leave room for much more complex and marked, woody, smoky, spicy, and citrus scents with this 5 Year Reggiano.
