[Recipe] Ochazuke or Japanese Tea Soup Rice makes a really comforting meal and is very easy to make! I am using green tea dashi broth for today’s recipe and matching it with my all time favourite fish - salmon. You can be creative with your toppings, but I like to keep it simple yet flavourful with seasoned seaweeds and bonito flakes. Without further ado, check out how I made it - Ingredients (1 pax) 1 salmon fillet (mine is 140g) 1 - 2 pieces of kelp 15g of bonito flakes 1200ml of water 3g of Japanese green tea leaves (to 200ml of dashi broth) Salt & pepper Toppings Seasoned seaweeds Bonito flakes 1) Soak dried kelp in water for 1 hour and above. 2) Bring the water with the rehydrated kelp to a light boil. Remove the kelp, then add bonito flakes. Continue to cook for a minute. 3) Drain 200ml of hot dashi stock into 3g of Japanese green tea leaves. set aside till ready to use. If you want to add more flavour to the broth, you can season with soya sauce or salt (optional). Drain the rest of the dashi stock into a storage container for future recipes. 4) Season salmon with salt and pepper. Sear the marinated fish in a small amount of preheated oil, till lightly brown on all sides and fully cooked. 5) Add salmon and toppings of your preference on a bowl of rice. Pour the green tea dashi broth into the bowl. Mix the rice into the broth when ready to eat.
