There is no law in California that caps the maximum percentage of butterfat one can have in ice cream. There IS a legal minimum of 10%, and guidance to use 14-16% for ‘premium’ products (this place uses 16%), but super premium or artisanal ice cream can be as high as 20%. So, this ice cream may be fantastic, but misinformation as a tool for hype makes this a hard pass.
