Deep fry the eggplant first (no more than 1 min), do a quick dip in boiling water to rinse off the excess oil, and then stir fry quickly with everything else finishing the sauce. Do not overcook as there is carry over cooking from the wok hei. Overcooking also releases the water inside the eggplant which ruins your sauce.

I’ve been there and honestly the food was super good especially the dumplings. only thing i think you can improve on is sizing down on the menu. the menu is way too full and very overwhelming. but the food was very good.
