It works because Root pressure (like a slow leak under pressure)
At night or early morning, when there’s lots of water in the soil and little evaporation, roots keep absorbing water. This builds pressure inside the tree’s xylem.
If there’s a cut or hole, the pressure can force water (sap) out—sometimes in a steady stream. So yea
