Ingredients • 10 fresh jalapeños, halved and deseeded • 225g (8 oz) cream cheese, softened • 1 cup shredded cheddar cheese (or a mix of cheddar & mozzarella) • 4 strips cooked bacon, crumbled • 2 tbsp chopped green onions (optional) • 1 cup all-purpose flour • 2 large eggs, beaten • 1½ cups panko breadcrumbs • Oil for deep frying • Salt & pepper to taste Instructions 1. Prep the jalapeños: Cut each in half lengthwise, remove seeds & membranes (wear gloves if sensitive). 2. Make filling: Mix cream cheese, cheddar, bacon, and green onions in a bowl. Season with salt & pepper. 3. Stuff jalapeños: Fill each half generously with the cheese mixture. 4. Breading: • Dredge stuffed jalapeños in flour. • Dip into beaten eggs. • Coat in panko breadcrumbs, pressing gently to stick. 5. Fry: Heat oil to 175°C (350°F). Fry jalapeños in batches for 2–3 minutes, or until golden and crispy. 6. Drain & serve: Place on paper towels to drain excess oil. Serve hot with ranch or spicy mayo dip.
