I watched a Jacques Pépin video about cooking omelettes. It’s not just the heat of the pan and the water beading test. He said that at one of his first jobs in a restaurant, he worked the omelette station. They only had stainless steel pans back then. Each chef had their own seasoned pan that they guarded with their life, because if they ever lost or misplaced their seasoned pan, they were screwed. The eggs would always stick in a new or unseasoned stainless steel pan. He said that he always uses a nonstick pan for cooking eggs/omelettes now, and won’t ever go back to a stainless steel pan. Your stainless steel pan has to be properly seasoned for the eggs to not stick.

no one seems to know the way and reasoning so i’ll explain, you must heat up the pan until the water beads and glides around , toss the water then apply a small bit of oil and let it get all over the pan, take off the heat and lower it, reason why we lower it is cause stainless steel expands when hot so lowering temp cause it to close which traps the oil giving you that seasoned /nonstick effect , you’re welcome

The water bead thing is way too hot. I cook eggs on stainless at a low/medium and it's prefect Everytime. Also for some reason spray oil works better than liquid.

Might be too hot. You can lower the temp to medium low once the pan is hot enough. Just takes some practice, like all things. Keep trying :) don’t give up and get plastic coated pans.

Heat the pan well- then add the oil and allow the oil to heat- turn down temp a minute or two before adding the eggs. They will slip and slide around the pan. When you turn the heat down, turn it down to about 4

Heat the pan on medium high heat, do the droplet test, once it passes, turn down to medium heat. Let sit for a sec and put avocado oil on it. Let sit for a sec again and then put eggs in!

Too hot , use on the lowest setting after reaching temperature, like 2/10 if that makes sense. Once I reach temperature I’ll usually take it off add the eggs then add back onto the burner.
