Remove from the heat and stir in the butter and vanilla. Transfer the pastry cream to a bowl, cover the surface directly with plastic wrap, and chill completely. Spread the chilled pastry cream evenly into the cooled tart shell. Arrange the strawberries on top in an even layer. Heat the strawberry jam with the water until smooth, then brush the glaze over the strawberries for a glossy finish. Refrigerate the tart for at least 2 hours before slicing and serving.
