INGREDIENTS: Chicken Marinade: - chicken thighs - 2 tbsp ginger garlic paste - 1 tsp kashmiri chili powder - 1 tsp turmeric powder - 2 tbsp garam masala - 1 tsp orange food coloring (optional) - 1/2 cup of ghee - 1 cup yogurt - Salt to taste Butter Chicken: - Ghee - 2 onions, chopped - 1 tsp cardamom - 1 tsp cumin seeds - 2 tbsp ginger garlic paste - 1 tsp kashmiri chili powder - 1 tsp coriander powder - 1 tsp garam masala - ½ cup cashews - 1 ½ cup of crushed tomatoes - Chicken stock as needed - 1 cup of cooking cream - 6 cubes butter - 1 tbsp fenugreek leaves - Salt & pepper to taste Garnish: - Cilantro - Croutons *all measurements are estimates. Measure w your ❤️ INSTRUCTIONS: - Marinate the chicken with everything under “Chicken Marinade.” Heat ghee and sear the chicken until fully cooked. Remove, chop into bite-sized pieces, and set aside. - In the same pot, sauté the onions until softened. Stir in the spices — cardamom, cumin, ginger-garlic paste, chili powder, coriander, and garam masala l - Add the cashews, crushed tomatoes, and chicken stock, then bring to a simmer for 10–15 minutes. - Stir in the cooking cream, butter, fenugreek, and season with salt and pepper.
