@andersonacres14: HOMEMADE FRUIT CUPS Ingredients 3 lb bag Mandarin Oranges 5 1/2c water 1 1/4c sugar Instructions Peel oranges and remove as much white tissue as possible without driving yourself nuts. Make simple syrup by combining water and sugar in a large stockpot and bringing to a boil. If you prefer sweeter fruit cups you can add more sugar. You can also use apple juice or water in place of the syrup. Fill jars with orange slices. Top with syrup. Place in the fridge or follow the below instructions for canning. Leave 1/2 inch headspace. Wipe rims. Add lids and rings. Process pints and quarts (or smaller) for 10 minutes in a water bath canner adjusting for altitude.

I've been using pectic enzyme when I make ours. peel, put in water and add your enzyme... the longer the better but I run the segments under water when I'm ready & all the white washes right off. tastes just like some from the store

They have what I think is an enzyme for wine making that will take the pith and skin off off of the orange sections before canning. I have not researched this, but maybe worth looking into.

now when I tell you this you may get upset.... my aunt and uncle are retired mandarin farmers and when they started the toured the cutie plant. they inject the rinds with orange color and pick them too soon. and that size are actually the ones they throw away....

I did this last year and i learned that a splash of vinegar in the water you put them in while u peel more helps get most that white stuff off and makes them taste wayyy better
