@angel.ayar: Brothy rice is the most comforting meal - Season the chicken with soy sauce, 1 tsp honey, 1 tsp rice vinegar, and 1 tsp gochujang. Leave to marinade for ideally atleast 30 mins. Saute flipping halfway, until golden and cooked through. - Rinse the rice and cook accordingly. I added olive oil, sesame oil, boullion to my water. - While the rice cooks, saute 1.5 tbsp miso paste, 1 tbsp soy sauce, 2 minced garlic, spring onions, 1 tsp rice vinegar, splash of sesame oil, and gochujang. Simmer gently for 30 minutes. - Heat a drizzle of oil in a frying pan, add the halved bok choi cut-side down, and sear for for 2-3 minutes until golden. - Place the cooked rice in a bowl, pour over the miso-ginger broth, and top with bok choi and sliced chicken. Garnish with extra green onions and sesame seeds.
