Calling this one: Herby herby chicken and rice. It's spiked with so many herbs, making it punchy and zesty, finished with lime and chilli. It's just a great way to have chicken and rice YUM! Serves 2 Takes 20 minutes 5-6 small chicken thighs - depends how many you'll eat/the size of them 2 tbsp @marksandspencerfood Coconut & Lime seasoning (if you can't find this, I would use any chicken seasoning or anything you like e.g. some ground cumin, paprika & garlic granules) 2 limes, juiced 1/2 red chilli, chopped (chop finely if you like it spicy, chop chunky if you prefer mild. Chunky chop just infuses a little heat but means you dont need to eat it later on) Handful of fresh basil Handful of fresh parsley Handful of fresh coriander (if you already have 2 of the 3 herbs, that's fine or mint/thyme/tarragon/thai basil - any herb works) 2 portions of rice (about 1/2 cup white rice) Olive oil 1 tbsp red wine vinegar 1. Start with the chicken. To a bowl, add a generous drizzle of olive oil then the seasoning, chicken, lime juice and chilli. If your seasoning doesn't have salt in, add it here. The M&S one does so it didnt need more salt. Set aside for 5 mins (or longer but this isn't always an option on a weeknight!) 2. Get your rice on to boil/cook however you like. Whilst the rice is cooking, finely chop all the herbs. You could also do this in a little food processor if you like.  3. Once the rice done and no water left, add to a bowl. Then add a squeeze of olive oil, red wine vinegar and a handful of mixed chopped herbs. Season and mix. Taste and set aside. 4. Now you can cook your chicken! Add to a pan over medium-high heat and cook for 6 minutes a side or until cooked through and no pink remains. I like to lay a sheet of greaseproof paper on top and then sit a heavy pan on top of that, to press the chicken into the pan. If you don't have a heavy pan, use a regular pan and sit a few tins from your cupboard on top.  5. Then when the chicken is cooked, cover in the remaining herbs. Slice up, serve with the rice!
