there is a reason you should temper your chocolate. they came out of the mould looking lovely, but they won't be lovely later when the box is opened up to reveal they have fat bloom and a grainy texture.

Your almonds need to be in the pot a bit longer until the sugar caramellizes! 🥰 It's the most scary step because you think you're done when they look like your almonds do but you're not. They'll be done when the sugar is caramelized ☺️
