Add into large pot cook chicken 90% then remove In this time while chicken cooked, I diced a white or yellow onion Then 2 bell peppers 🫑 Then 3-4 celery stalks Slice 2 packs andouille sausage. Cook in pot next then remove & set aside. In the same pot add 1 cup oil Then 1 cup flour. Keep mixing until it turn a brown melted chocolate color. It should smell nutty, not burnt. If it's too watery add flour slowly until sandy consistency. Then add the holy trinity ( onions, bell peppers, celery) Cook about 5 mins Add 5 cloves minced garlic Then add your meats. Add 8 cups chicken broth. Stir Turn heat up to bring to simmer Add 3 bay leaves 1/3 cup worchestire sauce or more if needed. Then add more Cajun seasoning. Once up to simmer , cover and let cook on low for 2-5-3hrs. Serve with white rice & garnish with green onion & parsley. Serve in bowl & Enjoy 😍

for anyone confused, there are 2 version of gumbo: chicken & sausage is one, seafood is the other. As someone born & raised in louisiana, i've had both MANY times, but never the two together. It's usually either or.

Best thing I did was cook the sausage first and then use the oil from that to cook the chicken and then the roux!! Makes it even more flavorful!!
