1 cup 00 or bread flour
2½ tsp active dry yeast
1 cup warm water Mix, cover & rest 45 min. After 45 minutes add:
5-7 cups flour
2 cups water
2 tsp sea salt
1 tbsp olive oil Start with 4 cups of flour into the starter. Add salt, water, olive oil and mix into a shaggy dough, then knead 5–10 min, adding flour as needed until smooth and workable. Place in a greased bowl, cover & rise 45 min. Parmesan Béchamel
2 tbsp butter
2 tbsp flour
1½ cups whole milk
½ cup heavy cream
1 tsp Garlic powder
1 tsp salt  Fresh cracked pepper
1/4 cup grated Parmesan Cook butter & flour 2–3 min. Slowly whisk in milk and cream. Season and simmer until thickened, then stir in Parmesan. Steak Filling
2 lbs thinly sliced sirloin (or preferred cut of meat)
Salt & pepper
1 tbsp Worcestershire
1 white onion, sliced
3–4 cups mozzarella Season steak with Worcestershire, salt & pepper. Sear over high heat until caramelized; remove. Caramelize onion in the same pan, then combine with steak. 
Divide dough in half and roll each into a large rectangle. Top each with half the béchamel, steak & onions, and 1½–2 cups mozzarella. Fold into thirds and place seam-side down on a lined sheet pan. Repeat the process with the second half of the dough. Cut 4 slits across the top. I prefer to bake them in separate cookie sheets to ensure a proper bake.  Bake at 400°F for 20–25 min until golden brown Brush with melted salted butter, slice & serve
