Braised Beef Short Ribs with Creamy Garlic Mashed Potatoes & Garlic Bread 🔥 probably one of my favorite meals i’ve made 🤌🏼 Ingredients Braised Short Ribs * 3 lbs beef short ribs * Kosher salt, to taste * Freshly cracked black pepper, to taste * 1 tbs neutral cooking oil * 1 cup diced carrots * 1 cup diced celery * 4 cloves garlic, thinly sliced * 6 cups beef stock * 2 bay leaves * 2 sprigs fresh rosemary Creamy Garlic Mashed Potatoes * 4 lbs russet potatoes, peeled and cut into cubes * Water, for boiling * Salt, for the boiling water * 1½ sticks (¾ cup) salted butter * 1 cup heavy cream * 1 tbs garlic paste * ½ tsp salt * ¼ tsp black pepper Sauce * Reserved braising liquid * ¼ cup water * 1 tbsp cornstarch Garlic Bread * 1 fresh French bread loaf, sliced into 1-inch slices * ½ stick salted butter, softened * ½ tbs garlic paste * 2 tbs chopped fresh parsley Instructions 1. Braise the Short Ribs • Preheat the oven to 325°F (163°C). • Season the short ribs generously on all sides with kosher salt and freshly cracked black pepper. • Heat a large Dutch oven or heavy-bottomed pot over medium-high heat and drizzle in the oil. Sear the short ribs on every side until a deep golden-brown crust develops. Remove the short ribs and set aside. • In the same pot, add the diced carrots, celery, and sliced garlic. Cook for 3–4 minutes, scraping the bottom of the pot to release all of the flavorful browned bits left behind from the meat. • Return the short ribs to the pot and pour in the beef stock. Add the bay leaves and rosemary sprigs.
