@johnzhengry: Shrimp Egg Foo Young I grew up on egg foo young so when I see pan fried omelettes being labeled egg foo young it got me riled up cus no just because you put bean sprouts and drizzle soy sauce on it instead of ketchup doesn't make it an egg foo young. Here's the recipe: INGREDIENTS Patties - Shrimp - Eggs - Cabbage - Bean Sprouts - Onions Sauce - Onion - Cinnamon Stick - Ginger - Scallion Whites - Star Anise - Oil - AP Flour - Broth - Light Soy Sauce - Dark Soy Sauce - Black Pepper - White Pepper - Mushroom Bouillon - Garlic Powder - Oyster Sauce - Sesame Oil INSTRUCTIONS - Heat up wok on medium low and fry the sauce aromatics for 30 minutes to extract all their flavor. Don't burn them or it will be bitter. - Add AP Flour to flavored oil to create a roux. Whisk for 5-10 minutes so it doesn't clump while still cooking. We are going for about a blonde roux. - Add stock and whisk til desired consistency. (The sauce will be thicker when cooled) - Add seasoning and whisk until no clumps whatsoever. - Heat oil in a pan preferably one with good heat retention as the patties need to cook right when dropped into the oil to hold a good shape. - Add veggies to a mixing bowl then crack in eggs and mix around. - Use a spoon to scoop up one ladle of mixture and carefully tilt pour into oil at the edge of the pot where the oil meets the pot. - Using a spatula or flat spoon, splash oil onto top of patties until it's set then you can flip. - Cook patties for about 1-2 minutes on each side depending on how thick they are. They should have some depth to it. outside crispy inside soft. - Let it drain a bit as they are very oily but if oil is hot enough, there shouldn't be an oily taste or oil in the middle just on the exterior. - Drown in sauce and enjoy.
