🥜 Mamaw Jordan’s Peanut Butter Balls (a.k.a. Buckeyes if you don’t dip ’em all the way) Rich, creamy, and downright dangerous, these peanut butter balls are a holiday staple, church-potluck hero, and “don’t tell anyone where they went” kind of treat. No baking required just a little patience while they chill. ⸻ Ingredients •	1 cup creamy peanut butter •	6 tablespoons butter, softened •	2¾ cups powdered sugar •	1 teaspoon vanilla extract •	1 package melting chocolate or almond bark, milk or dark ⸻ Instructions 1.	Cream the base In a large mixing bowl, beat together the peanut butter and softened butter until smooth and fully combined. 2.	Sweeten it up Slowly add the powdered sugar, a little at a time, mixing well after each addition. You’re looking for a soft but rollable dough. Stir in the vanilla extract. 3.	Roll the balls Line a large baking sheet with parchment paper or wax paper. Roll the peanut butter mixture into 1-inch balls and place them on the prepared sheet. 4.	Melt the chocolate Place the melting chocolate or almond bark in a microwave-safe bowl. Microwave for 30 seconds, stir, then continue heating in 10-second intervals, stirring each time, until completely smooth. (Follow package directions if they differ.) 5.	Dip & coat Dip each peanut butter ball into the melted chocolate until fully coated. Lift out with a fork, tap gently to remove excess chocolate, and return to the lined baking sheet. 6.	Set & chill Allow the chocolate to harden completely at room temperature or place the tray in the refrigerator to speed things along. ⸻ Storage Store in an airtight container in the refrigerator for up to 7 days if they last that long.
