No but I have wondered about the former Mrs. Claus, since we learn in the second movie that apparently Santa Claus has to have a Mrs. Claus or they can’t continue to be Santa, so what happened to the former Mrs. Claus when Santa died?

Nah. Santa is essentially the CEO of a multinational corporation. The elves are just acting like the rest of us would if we suddenly had a new CEO: annoyed, but kinda relieved we aren’t being downsized.

ignoring the rettcon in the newer stuff in the original movie you can see elf's in his everyday life and niebourhood before he becomes Santa, and more noticeable after/transitioning so they scouted him out

it was a conspiracy, they chose him to replace the old Santa. Elves are watching him and his family. In the 3rd movie there's time travel, they knew it was gonna happen.

Alternatively, this is the 100th "New" Santa in a row, making Allen the first one to stick around more than 12 months in a century or so. Would explain the efficiency and exhaustion in Bernard's voice for the "Your Santa" speech at the beginning

Guess no one watched the Santa Clauses series on Disney+. It was planned, then Orginal Santa wanted to quit and pass on the torch, and this something hinted at in the original movie as you can several elves disguised as kids as they see if Scott Calvin is a good replacement.
