Sugar 1/2 C. Corn Syrup 1/2 C. Heavy Cream 4 TBS. Butter 1/8 tsp. Salt 1 tsp. Vanilla For the cream center : 1/3 C. Vegetable Shortening (or coconut oil) 1/2 C. Corn Syrup 4 C. Powered Sugar 1 tsp. Vanilla And a sauce pan add sugar and corn syrup mix, and turn heat to medium high till it comes to bubble once bubbling slowly mix in heavy cream add butter and salt. Bring to a boil; use a candy thermometer and let the mixture reach 245°F. Once reaches temperature removed from heat and mix in vanilla. Pour caramel into a square pan line with parchment paper look cool for about 30 to 40 minutes. Make the cream center by mixing together all ingredients until thick creamy and smooth. Evenly spread cream center over the cooled caramel; leaving a border. Now roll it up jellyroll style. Wrap in parchment paper and refrigerate for a few hours before cutting to your desired size (cutting the caramel creams was the hardest part just reshape the caramel creams as needed). Store caramel creams and an airtight container in the refrigerator for a few weeks.
