That’s normal. The left channel is used for mono signals almost all the time. If you look at the output of a keyboard it will say L/Mono. Think of it like that

Do the right side controls effect anything when in mono ….if not then your left side mono is good to go

You just have to make sure what algorithms the plugins are designed to be, for example, if you have a plugin designed with a stereo algorithm and that MIDI playing back on a mono track, that’s where the issue can arise (not saying it will but that’s where you should pay attention). As for the two meters going off, it’s only because you are putting it in stereo. If the plugin has a stereo algorithm, it will have its left and right channels. If it is a mono algorithm, the signal would be duplicated to be “stereo” but there really shouldn’t be any audible differences when doing this change
