this is such a solid point. I started working as a chef 20 years ago and when I go somewhere knew I always ask how to do certain prep jobs, but so many chefs take it as you not knowing what you're doing, they don't realize i'm just trying to avoid letting all the guests know, there is a new chef in the kitchen.
your second point though, I believe you should do the prep exactly to the letter until you are confident, only then should you talk to your chef about changing propping methods.

when I was a baker pastry chef and I had a new apprentice come through I would always demonstrate three ways.
1 this is how school (Tafe in Aus) teaches you how to make the product.
2 this is how we are supposed to make the product.
3 this is how I do it.
now find what way works best for you but keep it consistent.

Do you know how many kitchens I've worked in ask if I know how to make such and such. I say yes, but how do you do it? I do it like this. Like tempura, some places like to use flour, others like a tempura flour then batter. Even still some just want just the batter. So I always ask how do you want it done

So from one point you re, right? But any kitchen, even 55 Rosetta star restaurant, you will have a recipe and the chef will never tell you what you have to do. When you come in the morning, you will have on a sheet. All the things which you have to do on which time. So don't listen this guy, he's probably just working magnol.
