Garlic Butter & Herb Roast Chicken! 🍗  For One Medium Chicken Ingredients:  Marinade:  100-150g Butter 5 Large Garlic Cloves Minced 1tsp Honey / Brown Sugar 1.5tsp Sea Salt  1tsp Crushed Pepper  Pinch of Nutmeg  1tsp Mixed Herbs (Oregano, Rosemary, Thyme) 1tsp Onion Powder  1tsp Garlic Powder 1tsp Paprika  2tsp All Purpose / Liquid Seasoning Half Orange Squeezed To Roast in: 1 Large Onion (Sliced) 2 Carrots (Chunks)   2 Sticks of Celery (Chunks)  Stuff Chicken With: Whole Orange (Cut in half)  Bunched together, Fresh Rosemary, Thyme, Oregano and Sage Sprinkle Oil and Salt  Gravy: Half Stock Cube 2tbsp Corn Starch & Splash of Water Salt to taste  Worcester sauce (optional)  Recipe:  - Cut and wash your chicken in salt & lemon water! Cut off excess skin / fat at the neck, pluck the feathers, and on an open flame singe off the excess hair. Or scrape with a sharp knife  - Pat your chicken dry!  - If you’d like to spatchcock the chicken (spread the chicken out like in the video), then with both hands push down on the chicken breast until it breaks the ribs and pushes the legs out to flatten it.  - Then, with scissors or a knife, flip the chicken upside down and cut on either sides of the spin, to take the spine out. This will spread the chicken legs out and you can bake it all evenly.  - Split the skin of the chicken away from the meat.  - Stuff the skin with seasoned butter and on outer skin - On your roasting tray, spread your veg and lay your chicken the right way up! (Breast and legs facing upwards)  - Squeeze your fresh orange all over and stuff under the chicken and stuff with the listed fresh herbs  - It’s best to marinade your chicken over night!  - Preheat the oven at 180C  - Cover your chicken in foil, make sure you avoid the foil touching the chicken skin.  - Bake in the middle shelf of the oven, not the top, under foil for 70-80 minutes total (for a small chicken then 50-60 minutes)  - Every 20-30 minutes, take out the chicken, uncover the foil and baste all the juices all over the chicken, keep doing this for a good 2 minutes, it’s ver important!  - If the legs, wings and top of breast start to brown, add an extra small square of foil and wrap around it for double protection and prevent burning  - Once fully baked, remove the foil, drain out 90% of the chicken juices into a pan to make the gravy.  - Add your stuffing balls to the chicken roasting tray and bake the chicken without foil for another 20 minutes total brown golden.  - For the gravy, mix together half a stock cube and 200ml boiling, add this to the gravy and extra seasonings if you like.  - Then mix corn starch and a splash of water - Slowly add that in whilst whisking! - Keep whisking on a medium heat until thickened!  - Let your chicken rest before serving!  - - - - - - #nishatcooks #christmasdinner #roastdinner #roastchicken #christmas
