This is my simple take on a traditional trifle, layers of cake,peaches, jelly, custard, and cream that just work every time. Are you making trifle this year for Christmas?✨ INGREDIENTS - 1 loaf Madeira cake, sliced thinly - 2 packets jelly (1 green apple, 1 raspberry), made ahead and set - 1 large tin sliced peaches (approx. 825 g), syrup reserved - +- 3 cups custard - 1 tub fresh cream (250 ml), whipped until thick - A handful of chopped pecans - Grated chocolate, to finish - Fresh cherries, to decorate (Optional) METHOD 1. Prepare both jellies ahead of time according to packet instructions and allow them to fully set. 2. Slice the Madeira cake thinly. Place a layer of cake into the base of a trifle bowl. 3. Spoon about 4–5 tablespoons of the peach syrup over the cake to lightly soften it. 4. Arrange a layer of sliced peaches over the cake. 5. Spoon over a layer of jelly. I prefer the jelly to be partially set at this stage. 6. Add a generous layer of custard and refrigerate until lightly set. 7. Repeat the layers: cake, a little more syrup, peaches, and jelly (raspberry jelly for the red layer). 8. Finish with the final layer of custard and chill until fully set. (Overnight for best results) 9. Top with whipped cream.
