so basically a simmer pot. I have one going everyday in winter since it also puts moisture in the air. I add apples, oranges, lemon and cranberries with cinnamon sticks, cloves, nutmeg and bay leaves.

How about stop with the open floor plan fad! Have a closed kitchen with a doorway or door to contain odors. I stand by my 1950s closed kirchen!

this doesn't really remove the odor. It only masks it, and even then it's questionable. The only way to really remove odors is to ventilate with fresh air and wait.
