Actually, Kip Thorne the Nobel physicist who did the math for the movie explains it’s not just a standard tide Here is the breakdown
1. Because of the Inverse Square Law, Gargantua pulls the front of the planet WAY harder than the back. This stretches the planet + ocean into a football shape. The "waves" are just the pointy ends of that football.
2. Thorne realized if the planet rotated normally, friction would vaporize it. So he calculated that the planet is Tidally Locked (facing the hole) but it has a wobble called Libration. The planet "rocks" back and forth, causing those massive bulges to slosh over the surface.
3. Thorne calls these waves Solitons (solitary waves). They don't break or crash like Earth waves; they just hold that massive shape and travel forever because the planet is shaking beneath them.
4. Since the Tidal Force is so extreme, it pulls 99% of the water into those two mountains. The rest of the planet is drained dry (conservation of mass).
