It’s just from people working with tar and they would get tar on their heels and would be called Tar Heels

“Tar heel,” like “Rosin heel” before it, was a pre-Civil War term used to designate poor, marginalized Southerners (not just NCans) who lived in the great pine forests of the South. Some of these worked in the production of resin and tar. The term was applied to both white and Black Southerners. Term stuck to NC because the state was the largest producer of resin and tar.
