Ingredients 1/2 package bacon, uncooked and chopped into small pieces 3 tbsp butter 1 medium yellow onion, diced ⅓ cup all-purpose flour 6 large russet potatoes, peeled and diced 4 cups chicken broth 2 cups milk ⅔ cup heavy cream ⅔ cup sour cream 1½ tsp salt (adjust to taste) 1 tsp black pepper 1 tsp garlic powder ½ tsp chili powder Directions 1. Cook bacon in a large pot until crispy; remove and set aside, leaving grease in the pot. 2. Add butter and onion; sauté until soft. 3. Sprinkle in flour and whisk until smooth. 4. Stir in potatoes, broth, milk, cream, and seasonings. 5. Bring to a boil, then simmer until potatoes are tender. 6. Blend 1/3 of the soup until smooth, then return to the pot. 7. Stir in sour cream and the bacon. Simmer 5–10 minutes until thick and creamy. 8.
