Remove bacon and set aside, leaving about 2 tablespoons of grease in the pot. 2.Sprinkle flour into the bacon grease and whisk for 1–2 minutes until lightly golden and smooth. 3.Slowly whisk in heavy cream and chicken broth. Add diced potatoes, onion powder, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer 15–20 minutes, until potatoes are fork-tender. 5.For a thicker soup, lightly mash some of the potatoes in the pot or blend a small portion.
