@britacooks: Easiest Dumpling Soup 🥟 Whenever I don’t know what to make and I see a package of frozen dumplings or potstickers in my freezer I make this soup. It is truly so so easy and you can add whatever greens you like! Ingredients: 1 tbsp Neutral oil 2-3 scallions, whites and greens separated 1 tbsp fresh ginger, minced 2 cloves garlic, minced 2 tbsp Shaoxing wine 4 cups chicken broth Dash of soy sauce 1 package Trader Joe’s frozen dumplings 2-3 heads baby bok choy, halved or quartered Aunt Lily’s Chili Oil, to finish (recipe on my blog!) Sesame oil, to finish Instructions: 1.Heat a drizzle of neutral oil in a pot over medium heat. 2. Add scallion whites and ginger and then saute for 2-3 min until fragrant. 3. Add garlic and cook 1 min. 4. Add Shaoxing wine and cook for another 1-2 min. 5. Add chicken broth and a dash of soy sauce. Simmer for 10 minutes. 6. I like the broth super clear/clean so I strain it and return to the pot and keep warm. 7. In a separate pot, boil water and cook frozen dumplings until cooked through. Transfer to serving bowls. 8. Using the same boiling water, quickly blanch the bok choy until bright green and tender. Add to the serving bowls with the dumplings. 9. Pour hot broth over potstickers and bok choy and finish with chili oil, scallion greens, and a light drizzle of sesame oil! Hope you like it! xx
