@_jennadenise: Carrot Cucumber Ribbon Salad Salad • 3 large carrots, shaved with a julienne peeler • 1 medium cucumber, shaved with a julienne peeler (stop once you hit the seedy center) • 1 small shallot, finely chopped Dressing • ~1 tbsp chili oil (I used what was left in my @Momofuku chilli crunch jar) • 1 tbsp sesame oil • 1/2 tbsp rice vinegar • Juice of 1/2 lime • 1/2 tbsp gochujang • 1 tbsp soy sauce Add all dressing ingredients to a jar, shake until emulsified, pour over the vegetables, and toss well.
