@fromscratchwithbob: Your Christmas dinner timeline 🎄⬇️ Prep: If you have plenty of oven space and you’re a confident cook, you can make everything on the day. If not, you’ll want to get ahead the day before. The cranberry sauce and red cabbage will be just as nice when warmed up the next day, and other prep jobs like chopping veg, wrapping pigs in blankets, and setting the table will save you time, too. Turkey: On the day, the first thing to go in the oven is your turkey. Don’t worry about timing it to come out perfectly with the rest of the meal — you’re better off cooking it on the early side, then wrapping tightly with foil and covering with a tea towel to keep it warm. The same goes for your pigs in blankets — you’ll want oven space later on, so get them in early then pop them back in the oven to warm up before serving. Potatoes: Once your turkey is in, start the potatoes. They always take much longer than people anticipate to get really golden and crunchy. I’d recommend you boil the potatoes, let them drain well so they’re nice and dry, then pop them in the oven about 2 hours before you want to serve dinner. You can always take them out once they’re golden brown, then pop them back in for 10 minutes before you serve up to make sure they’re still hot and crispy. Better that than have the whole meal ready to go while your potatoes are underdone! Sides: If you’re making everything on the day, this is your time to make the sides, such as cranberry sauce, red cabbage, stuffing etc. and have the rest of your vegetables prepped and ready to boil last minute. Yorkshires: Yorkshire puddings are best served fresh and need a very hot oven. Get most of the roast out of the way first, then start the Yorkshires about 45 minutes before serving. Whisk the batter then put them in the oven for 25-30 minutes. Make sure anything else in the oven can stay put for that time — once the Yorkshires are in, you mustn’t open the door, or they’ll sink! Final tasks: While the Yorkshires cook, boil your veg, then use the vegetable water to make gravy. Once the Yorkshires are out of the oven, pop back in anything you’d like to warm up, then start serving! . . #cookingfromscratch #christmasdinner

When I was a kid, my mom roasted chestnuts in the oven but didn’t know to cut them first and they all exploded. Now every time the “chestnuts roasting in the open fire” song comes on, we add BANG! POP! BOOM! to the lyrics

To me, chestnuts taste nutty and faintly sweet with a soft, starchy quality that feels nourishing rather than indulgent. They truly taste of winter. Comforting.
