@cookingwzainab: Roast potatoes 🎄 Golden crispy deliciousness Ingredients * 2kg Maris Piper potatoes * 100g ghee * 2 stock cubes * 4–6 garlic cloves * 2 sprigs of rosemary * Sea salt, to finish Method 1. Peel the potatoes and cut them into fairly large chunks. 2. Add them to a large pan of water with the stock cubes and bring to a boil. Cook for about 11 minutes, until just cooked through. 3. Drain the potatoes and leave them to sit in a colander for around 5 minutes. 4. While the potatoes rest, add the ghee to a large roasting tray and place it in the oven to heat. Add the garlic cloves and rosemary. 5. Give the potatoes a quick shake, then add them to the hot tray and make sure they’re well coated in the ghee. 6. Roast at 170°C for about 1 hour 20 minutes, turning the potatoes every 20 minutes for even crispiness. 7.
