In the US, eggs are washed, which removes their natural protective layer, so they must be kept in the fridge. In France, eggs are not washed, so they can be stored at room temperature. Milk in the US is always refrigerated because it is pasteurized, not UHT. Pasteurized milk must stay cold from production to the store and at home to prevent bacteria from growing. If it is not kept cold, it can spoil quickly. In the US, salads and vegetables are sprayed with water in supermarkets to keep them fresh and attractive. The water prevents them from drying out under strong air conditioning. In France, this is rare because vegetables are sold faster and kept in cooler conditions.

That milk is UHT which is ultra heat processed to kill bacteria and make it shelf stable. You can find it all over the world and some countries only have UHT or powdered milk but if you take a peek in the fridges you will find fresh milk too.

It’s because in Europe, there is no bullshit in the foods! I grew up in Germany, food was the same. Not refrigerated milk, or eggs. Eggs should not be refrigerated if they are fresh

chez nous, le lait est pasteurisé et mis en tetrapak pour le conserver. pour les œufs, on ne les lave pas à la javel comme les us, sinon on enlève une protection sur l oeuf qui le rend sensible aux températures. c est pourquoi on peut les garder hors du frigo.
