School Nights in the Slow Cooker Part 4 | Crockpot Broccoli Cheddar Chicken Orzo This is one of those easy dinners that feels like comfort food but is simple enough for a busy school night! Ingredients 1–1½ lbs chicken breast ½ sweet onion, diced ½ cup shredded carrots Chicka Licka Bam Bam Chicken Rub, to taste @Fire & Smoke Society ½ tsp garlic powder ½ tsp onion powder 2 tsp chicken bouillon powder ½ tsp paprika ¼ tsp black pepper 1½ cups chicken broth 2 cups broccoli 1 cup orzo 1 (8 oz) block cheddar cheese, freshly shredded plus more for topping ½ cup heavy cream Salt, to taste at the end Directions 1. Add the chicken, diced onion, shredded carrots, chicken rub, garlic powder, onion powder, chicken bouillon powder, paprika, black pepper, and chicken broth to your slow cooker. 2. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the chicken is cooked through and tender. 3. Remove the chicken, shred or chop it, and return it to the slow cooker. 4. Stir in the orzo, broccoli, heavy cream, and shredded cheddar. Cover and cook on HIGH for about 30 minutes, stirring once or twice, until the orzo is tender. Keep an eye on it toward the end since orzo can absorb liquid quickly. 5. Taste before adding any salt.
