Sadly biology affects this as men speak louder, deeper, have more aggressive mannerisms, the testosterone affects the wolves and some scientists think there is some cultural inheritance there too as men have hunted wolves heavily over the last few thousand years. Women are often accepted much more easily than men and bond more with the wolfdogs. As for non binary categories, wolves only smell your hormones so they will see you as a he or a she depending on your hormonal chemistry. I have another possible reason: Men are more likely to pretend not to feel fear, but the wolf can smell it, and notice that the mans internal state doesn't match their outward behavior, making them distrust them.
