The problem with chocolate was the the structure. Chocolate had a sand-like, unpleasant and chunky texture. If you wanted to enjoy chocolate, you had to melt it. In 1879 the Conche was invented (Mister Rudolf Lindt) and suddenly the chocolate we know and love was born.
