Coconut Curry Chicken with Coconut-Infused Basmati Rice 🍛 This meal took me about 1 hour and 30 minutes to make, so take your time—it’s worth it! For the coconut curry: 1. You can use any chicken you like, but I used chicken thighs. 2. Heat your pot over medium heat, then add 4 tablespoons of olive oil. 3. Add the chicken and let it brown on the bottom before stirring. 4. Add 2 tablespoons of my homemade garlic-and-cilantro paste, then stir everything together. 5. Pour in one can of Thai-style coconut milk and about 2 cups of water. Stir well. 6. Add your seasonings: • 1 teaspoon garam masala • 2 teaspoons coriander • 1 teaspoon cumin • 1 teaspoon Kashmiri paprika or smoked paprika • 1 teaspoon turmeric • 2 teaspoons Vegeta seasoning 7. For extra flavor, you can also add dried chilies or fried onions—both are optional. 8. Keep the sauce cooking over medium heat. Once the chicken is fully cooked and the sauce starts to thicken, turn the heat down to low and let it finish cooking slowly. For the coconut-infused basmati rice: 1. Add coconut milk to hot water and stir. 2. Wash 2 cups of basmati rice and add it to the pot. Adjust the amount depending on how many people you’re serving. 3. I parboil my rice, drain it, and then steam it until it’s perfectly fluffy. Once the curry and rice are finished, let everything cool for about five minutes—or serve it immediately if you can’t wait! 😂 If you try this recipe, make sure you tag me and let me know how you liked it. Don’t forget to share it with a friend who loves coconut curry! 🥥🍛 #CoconutCurryChicken #coconutcurry #EasyRecipes #bellayusuf
