This is my plant-based, balanced, healthy take on the classic mac and cheese. Protein from silken tofu, white beans, nutritional yeast, and soy milk, healthy fats from cashews, and fibre from the beans and veggies.  RECIPE (serves 3) INGREDIENTS  • 1 tbsp olive oil • 1 packed cup finely chopped broccoli • 1 tin cannellini beans, drained & rinsed • 1 cup frozen peas • 250g uncooked macaroni (I used gluten-free brown rice) • 2 tbsp rose harissa paste (or regular harissa) • small squeeze of lemon juice • salt & pepper For the sauce:  • 300g pack silken tofu • 1/4 cup cashews • 3/4 cup soy milk • 1/2 cup nutritional yeast • generous pinch of salt • 1 tsp white miso paste • 1 tbsp apple cider vinegar  • 1/2 tsp smoked paprika • 1 tsp garlic powder • 1 tsp onion powder For serving:  • fresh parsley • rocket (handful per serve) METHOD 1. Cook the pasta as per the packet instructions. Make sure to save some of the starchy pasta water to mix through at the end (up to 1 cup).  2. Heat the oil in a pot over medium heat and saute the chopped broccoli for around 4 min, until it starts to brown. Add a splash of hot water to the pot, cover with a lid, and cook for 2-3 more min to soften the broccoli.  3. Add the sauce ingredients to a high-speed blender and blend until smooth and creamy.  4. Add the peas, beans, cooked pasta, sauce, and harissa to the pot. Mix well and heat through for a few minutes. Add some pasta water as needed to help make it silky.  5. Turn off the heat and season with lemon juice, salt, and plenty of pepper.  6.
