Pull your side panel down, the whole curve rectangle window has to be in frame in order for you to place key frames

I've also had this issue. it's dumb, but as best as I can tell, it will only let you mess with one curve box at a time, and it decides which one is able to be used based on the top most viewable header. so like, if the name "RGB curve" above the box isn't visible, it's going to assume you want to use the hue vs sat curve instead. if it's ever not working, scroll up a little and possibly make the window a bit bigger. wish they'd change it bc it's stupid, but I hope this helps in the meanwhile.

I have another one: When I use the color picker for the color curves (saturation, luminosity etc), it sometimes chooses a completely different color or just don’t choose anything 🤷♂️💀
