You guys - it is SO good and has so much flavor and texture! I love the crunch of the pistachios and the flavor of all the fresh herbs!  This is a perfect summer side dish, and it stores great in the fridge for a few days! I added chicken for some added protein, but you can leave it out to make this dish vegetarian.  Ingredients:  - 2 cups cooked quinoa - 1 shredded chicken breast (optional to add protein) - 15 oz can chickpeas - 1 medium cucumber, diced  - 1/2 red onion, diced  - 1/2 cup crumbled feta cheese - 1/4 cup roasted pistachios, chopped - 1/4 cup chopped parsley - 2 tbsp chopped mint - juice of 1/2 lemon - 2 tbsp olive oil - salt + pepper to taste  How to:  - Add cooked quinoa to a big bowl with drained & rinsed chickpeas, shredded roasted chicken, diced cucumber and red onion, crumbled feta cheese, chopped pistachios, parsley and mint.  - Squeeze over the lemon juice, olive oil and a pinch of salt and pepper to taste.  - Toss everything together and enjoy!
