🍗 Creamy Marry Me Chicken Soup A rich, creamy and comforting soup made with tender chicken, sun-dried tomatoes, garlic, Parmesan, spinach and Italian herbs. This recipe makes about 4–6 servings. Ingredients Chicken 1½ lb (680 g) boneless, skinless chicken breasts or thighs 1 tsp Italian seasoning ½ tsp smoked paprika ½ tsp garlic powder ½ tsp salt ½ tsp black pepper 1 tbsp olive oil Soup 2 tbsp unsalted butter 1 small yellow onion, finely diced 4–5 cloves garlic, minced ½ cup sun-dried tomatoes, chopped 2 tbsp all-purpose flour 4 cups chicken broth 1½ cups heavy cream ½ cup freshly grated Parmesan cheese 2 cups fresh baby spinach 1 tsp Italian seasoning ½ tsp red pepper flakes, optional ½ tsp black pepper Salt, to taste For Garnishing Freshly grated Parmesan Fresh basil or parsley A few chopped sun-dried tomatoes Cracked black pepper Red pepper flakes, optional --- Instructions 1. Season the chicken Pat the chicken dry with paper towels. Season both sides with: Italian seasoning Smoked paprika Garlic powder Salt Black pepper Make sure the seasoning is evenly distributed. 2. Sear the chicken Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Add the chicken and sear for approximately 4–5 minutes per side, until nicely golden brown. The chicken doesn't need to be completely cooked through at this stage. Remove it from the pot and place it on a plate. 3. Sauté the aromatics Reduce the heat to medium and add the butter. Add the diced onion and cook for 3–4 minutes, until softened. Add the minced garlic and cook for another 30–60 seconds, just until fragrant. 4. Add the sun-dried tomatoes Stir in the chopped sun-dried tomatoes. Cook for about 1–2 minutes so their flavor and natural oils infuse into the butter. 5. Make the base Sprinkle the flour over the mixture and stir continuously for about 1 minute. Slowly pour in the chicken broth while whisking or stirring to prevent lumps. Scrape the browned bits from the bottom of the pot—this adds a lot of flavor. 6. Add the cream Pour in the heavy cream. Add: Italian seasoning Black pepper Red pepper flakes, if using Stir everything together and bring the soup to a gentle simmer. Don't let it boil aggressively, because the cream can separate. 7. Return the chicken Place the seared chicken back into the soup. Cover partially and simmer over medium-low heat for approximately 12–18 minutes, depending on the thickness of the chicken, until the chicken is fully cooked. The internal temperature should reach 165°F (74°C). 8. Shred or slice the chicken Remove the chicken from the pot. Let it rest for a few minutes, then either shred it into bite-sized pieces or slice it. Return the chicken to the soup. 9. Add Parmesan and spinach Reduce the heat to low. Gradually stir in the freshly grated Parmesan until melted and incorporated into the creamy broth. Add the fresh spinach and cook for 1–2 minutes, just until wilted. Taste the soup and adjust salt and pepper as needed. 10. Serve Ladle the hot soup into bowls. Finish with: Freshly grated Parmesan Fresh basil or parsley Cracked black pepper A few chopped sun-dried tomatoes A pinch of red pepper flakes Serve immediately while it's hot and creamy. 🔥 Pro Tips Freshly grated Parmesan melts much better than pre-shredded Parmesan. Don't boil the soup after adding the cream and Parmesan. Chicken thighs will give you an especially juicy and flavorful result. For a thicker soup, simmer it uncovered for a few extra minutes. For a thinner soup, add a little extra chicken broth. For extra richness, add 1–2 tbsp of the oil from the sun-dried tomato jar when sautéing the onion and garlic.
