Protein-packed 😍 Macros (serves 4) • 540kcal • 31.2g P • 57g C • 13g F Ingredients: • 3 cups cooked & cooled jasmine rice • 500g skinless salmon fillets, diced • 5 cloves garlic, minced • 1.5 tbsp ginger paste • 1 small onion, finely diced • 2 tbsp lemongrass paste • 4 lime leaves • 1 tbsp Tom Yum paste • 1 tbsp Thai chilli paste • 1 large carrot, finely diced • 1 large red pepper, finely diced • 1.5 cups green beans, sliced (1 cm) • 1 tsp white pepper Sauce • 1.5 tbsp fish sauce • 1.5 tbsp fresh lime juice • 2 tsp coconut sugar Optional garnish: Coriander, chili oil, lime wedges and fried shallots. Method 1. Char the salmon: Pan-fry salmon over medium-high heat with a pinch of salt for 4–5 minutes until beautifully golden and just cooked. Remove and set aside. 2. Build the flavour: In the same pan, fry lime leaves, onion, carrot, red pepper and green beans for 4-5 minutes until softened. Add garlic, ginger, lemongrass paste, Tom Yum paste and chilli paste. Stir for 2 minutes until fragrant. 3. Rice it up: Add rice and toss until every grain is coated. Return salmon to the pan, pour in the sauce, add white pepper and stir for 1 more minute. ✨ Finish with lime, coriander, chilli oil and fried shallots.
