@mumsfoodies: 24 Days of Christmas Appetizers Pt 24🎅 Last in the series and perfect for an easy last minute appetizer. Delicious hot & cold. Wishing you all the best Christmas 🎄🎄🎄 1 sheet puff pastry 100g grated mozzarella 40g grated Chedder Black pepper 80g thin pancetta (or streaky bacon or prosciutto) 1 egg for brushing Topping: Mix - Fresh chopped parsley, basil or coriander 1 garlic chopped or crushed 2 tbs olive oil Preheat oven to 180C You could brush some mustard before the cheese but I didn’t because my kids wouldn’t have eaten it. Brush the pastry LIGHTLY with egg wash. On the long half spread your cheese out and then layer your pancetta. Fold it over and slice into about 1.5cm wide strips (I got 20) brush lightly again with egg wash. Twist the strips round and add to a baking tray with parchment paper. Brush again with the egg. Bake for 20-22 min till golden and crunchy. Brush with garlic oil as soon as they come out. If you want to prep these in advance shape and brush with egg. Freeze on a tray till hard and then into a bag. Cook straight from frozen Enjoy D 🫶 #fyp #puffpastry #appetizers #partyfood #christmasfood

🩶CLASSIC VINAIGRETTE DRESSING A timeless, versatile dressing that enhances the natural flavors of fresh ingredients with perfect balance, brightness, and elegance. Yield: Approximately 250 ml (1 cup) Ingredients * 150 ml Extra Virgin Olive Oil * 50 ml Red Wine Vinegar * 1 tsp Dijon Mustard * 1 tsp Honey (or sugar) * 1 small garlic clove, finely minced * ½ tsp Salt (or to taste) * ¼ tsp Freshly Ground Black Pepper Method 1. Prepare the Base In a mixing bowl, combine the red wine vinegar, Dijon mustard, honey, minced garlic, salt, and black pepper. 2. Whisk Thoroughly Whisk until the mustard is completely dissolved and all ingredients are well combined. 3. Emulsify Slowly drizzle the olive oil into the mixture while whisking continuously until the dressing becomes smooth and lightly thickened. 4. Adjust the Seasoning Taste the vinaigrette and adjust with additional salt, pepper, or vinegar as needed to achieve the desired balance. 5. Rest Allow the dressing to rest for 10–15 minutes so the flavors can fully develop. 6. Serve Whisk or shake well before serving, as natural separation may occur. Chef’s Tip: For the best flavor, use high-quality extra virgin olive oil and good-quality red wine vinegar. A classic vinaigrette follows a 3:1 ratio of oil to vinegar, creating a perfectly balanced dressing. Best Served With: * Green Salads * Grain Salads * Roasted Vegetables * Seafood Salads * As a Marinade for Chicken, Fish, or Vegetables Storage: Store in an airtight container in the refrigerator for up to 5 days. Allow it to come to room temperature and shake well before using. Chef’s Note: A classic vinaigrette is built on simplicity quality ingredients, proper emulsification, and balanced seasoning create a dressing that complements, rather than overpowers, fresh ingredients.
