It’s probably a really thick cotton or linen (think denim) for warmth and durability with a wax waterproofing layer on the outside (usually paraffin). They make great outdoor work jackets and use the same mindset as sail cloth and work clothes sailers used to use! This GQ article explains it a bit better if you’re curious about more details.
