During our stay at a Bedouin camp in Wadi Rum, this was one of the experiences that truly stayed with me. We were introduced to Zarb — a traditional Bedouin underground cooking method that is far more than just a way to prepare food. Watching the process felt like stepping into a living tradition. A pit is dug into the sand, wood is burned down to hot coals, and the food is carefully lowered into the earth before being sealed and left to cook for hours beneath the desert floor. What struck me most was the story behind it. Zarb was shaped by the daily rhythms of Bedouin life. Herders would begin their day before sunrise, returning before the desert heat peaked, then heading out again later until sunset. With families often away from camp in the late afternoon, leaving food exposed was simply not practical — sand, animals, and the harsh environment would quickly ruin it. The solution was brilliantly simple: prepare the meal during the midday heat, place it underground, and return at sunset to uncover a perfectly cooked dinner. There is something special about that moment when the sand is lifted. It feels almost ceremonial — the warm air, the smoky aroma, and the anticipation of sharing a meal that has been quietly cooking beneath your feet for hours. For us, it wasn’t just about tasting delicious food. It was about witnessing how culture, environment, and necessity come together in such a beautiful way.
