@rodvincenzi Reclamar ou resolver? O segredo no casamento! Lechon Kawali is a crispy Filipino deep-fried pork belly dish, often served with a dipping sauce like sawsawan. Here's a classic recipe: Ingredients - 1 kg pork belly (with skin, cut into 4–5 inch pieces) - 2 tbsp salt - 1 tbsp whole black peppercorns - 4 bay leaves - 6 cloves garlic (crushed) - 1 tbsp vinegar - Water for boiling - Oil for deep-frying - For Sawsawan (Dipping Sauce): - ½ cup vinegar - 1 pc red onion (chopped) - 2–3 bird's eye chilies (sliced) - Pinch of salt and sugar Instructions 1. Boil the pork: In a large pot, combine pork belly, salt, peppercorns, bay leaves, garlic, vinegar, and enough water to cover. Bring to a boil, then simmer on low heat for 45–60 minutes until tender (poke with a fork to check). 2. Prep for crispiness: Remove pork from the pot, pat completely dry with paper towels. Score the skin in a diamond pattern (cut through skin only, not into meat). Rub skin with a thin layer of salt, then refrigerate uncovered for at least 2 hours (or overnight) to dry out the skin. 3. Fry: Heat oil in a deep pot to 375°F (190°C). Carefully lower pork pieces (skin-side down first) and fry for 10–15 minutes, turning occasionally, until skin is golden and crispy. 4. Serve: Let rest for 5 minutes, then slice into thick pieces. Serve hot with the prepared sawsawan. #localfood #healtylifestyle #dailymenuideas
