🌟🌟🌟 The famous Penne Giardiniera 🌟🌟🌟 - from Antonio Carluccio ❤️🤌🏼🇮🇹 This is one of my all time favourite pasta dishes. I first tried it in 2009 and have been making it at home ever since. Each time I have made it have been adjusting and improving. I’m so excited to share it with you. ❤️ 🇮🇹  Buttery Courgette Pasta with Spinach & Cheese Balls Ingredients Spinach Balls * 700g spinach * ½ garlic clove, minced * 1 egg * Pinch nutmeg * 45g Parmesan, grated * 70g breadcrumbs * Salt & pepper * Vegetable oil (for frying) * Paper towels (for draining) Pasta * 500g penne * 80g butter * 2–3 garlic cloves, chopped * 20g red chillies, chopped * 2 courgettes, grated * 100g Parmesan, grated * 100g Pecorino, grated * 2–3 ladles pasta water * Salt & pepper 👩‍🍳 Method Spinach Balls 1. Sauté spinach in a little oil with a pinch of salt until wilted. 2. Mix with garlic, egg, nutmeg, Parmesan, half breadcrumbs, salt & pepper. 3. Roll one test ball and fry in vegetable oil. Adjust mixture if needed. 4. Shape remaining balls and fry until golden. 5. Drain on paper towels and set aside. Pasta 1. Cook penne in salted water. Reserve 2–3 ladles of water, then drain. 2. Sauté courgettes in a little olive oil & butter in a large pan for about 5 mins. 3. then add garlic & chillies. Cook until fragrant. 4. Add pasta water, stir to loosen. 5. Add pasta, mix in most of the Parmesan and Pecorino. Season. Serve * Plate pasta, top with spinach balls. * Sprinkle with remaining cheese. #pasta
