Of course, Jesus was born on Christmas Eve. That's why Eastern Europeans celebrate with that very late dinner. It's the same in Romania. The presence of fish at the table (at least one dish) is a symbol of the fact that we are Christians. It's a relaxed family meal where the prepared goodies are served and carols are sung together.

As someone already mentioned, all these traditions are Slavic. 12 dishes symbolise 12 months of prosperity for the coming year, empty chair was for the souls of deceased ancestors, and the hay under the tablecloth is offering for the gods for a bountiful harvest in the coming year.
